Patina or Rust on a Japanese Knife: What the Makers in Japan Actually Say

English-language guides to carbon steel knives tell you to build a patina. The standard method is to chop a potato or an onion, wipe the blade, repeat, and let a grey film settle over the steel. Do not scrub it off. Acidic food helps. The film protects the blade.

Here is Sakai Jikko, a knife house in Sakai, on the same subject:

酸系等の食材、トマト・レモン等を切られた後はすぐに包丁を洗って下さい

After cutting acidic ingredients such as tomato or lemon, wash the knife immediately.

And here is the same page on how a new carbon knife should be treated for its first weeks:

包丁が新しい内は酸化皮膜を作るために一日に一度程度、クレンザーでお手入れをすることをお勧めします

While the knife is new, we recommend caring for it with abrasive cleanser about once a day, in order to form the oxide film.

Read those two together. Japanese shops want the same protective oxide film that English guides want. They tell you to produce it by scouring the blade with abrasive cleanser, not by staining it with vegetables. One of these traditions has the mechanism wrong, and only one of them explains itself.

This is the seventh piece in a series about the gap between what Japanese knives are called abroad and what they are in Japan. So far: the steel grades buyers compare are shop price tiers; the three great regions are not the official list; bunka is not a blade shape; damascus is a catalogue category for pattern stock; the handle is fitted by the wholesaler at the end; hand forged collapses three separate Japanese words.

This one is the most practical of the seven, because getting it wrong destroys the knife you bought.

First, the evidence against my own argument

I went looking for a Japanese source that flatly denies protective black oxide, so I could say the patina story was invented abroad. I did not find one. I found the opposite, so I am putting it first.

Fukube Kaji is a rural smithy in Noto, founded in 1908, that still sharpens and repairs knives by post. Its own page sets out the chemistry properly:

赤錆とは…主に水酸化第二鉄、酸化第二鉄が中心の錆です。赤錆は金属を腐食させてしまうため、早急なメンテナンスが必要になります。一方、黒錆はマグネタイトを中心とした錆で、皮膜となることで中の腐食を遅らせる効果があります

Red rust is centred on iron hydroxide and iron oxide. Red rust corrodes the metal, so it needs urgent attention. Black rust, on the other hand, is centred on magnetite, and by becoming a film it has the effect of slowing corrosion underneath.

So the distinction is real and a Japanese smith states it. Black oxide protects. Red rust eats. Anyone who tells you the patina idea is pure marketing has not read the Japanese sources either.

Now look at the two examples that same page gives of black oxide being produced on purpose:

わざと黒錆を発生させコーティングすることで、腐食を防ぐこともあります。鉄製の中華鍋を煙ができるほど空焚きするのは、そのためです。また、包丁では「黒仕上げ」「黒打ち」と呼ばれる黒錆をつけたものもあります

Black rust is sometimes generated deliberately as a coating to prevent corrosion. That is why an iron wok is heated dry until it smokes. There are also knives with black rust applied, called kuroshiage or kurouchi.

Both examples are fire, and both are applied by a maker rather than grown by a cook. A wok burned until it smokes. Kurouchi, which is the black forge scale left on the blade from the smith heating it, and which arrives on the knife the day you buy it.

Neither example is a grey haze that appeared because you cut onions. The Japanese trade has a word for the protective oxide and a method for producing it, and the method is not the one in the English guides.

One more measurement, because absence is worth checking rather than assuming. Tojiro, the largest maker in Tsubame-Sanjo, publishes a large library of articles about knives. I searched its entire article library for the word 黒錆, black rust, and there are no results at all. The concept simply does not appear in how Japan largest knife publisher talks to Japanese buyers.

What Japan largest maker actually says about discolouration

Tojiro has an official care page. There is no good-rust category on it. There is one instruction:

ちょっとしたサビでも、気付いたらキレイに落とすようにしましょう

Even a small bit of rust, when you notice it, clean it off.

The reason is a specific mechanism rather than a general worry. Tojiro describes what it calls もらいサビ, transferred rust, which comes from your tap water:

水道水に含まれるミネラル分は基本的に微量な金属であるため、この金属粒子が表面に残ると稀に部分的にもらいサビが発生する場合もあります…そのまま放置しておくと、内部にサビが浸透していき、ピンホールのような深いサビに発展する場合もあります

The mineral content in tap water is essentially trace metal, so when those metal particles remain on the surface, localised transferred rust can occasionally occur. If left alone, the rust penetrates inward and can develop into deep, pinhole-like rust.

Sakai Ichimonji Mitsuhide puts the same point more bluntly. This is written by Jun Watanabe, who does the sharpening and the mei cutting at that company, which makes him the same source I used in the first piece in this series when I explained that the name on the blade is struck by the wholesaler:

錆びが発生すると消えることは絶対にない

Once rust has appeared, it will never disappear on its own.

And on the environment a kitchen knife lives in:

包丁を使う環境は実は金属にとって非常に過酷な環境だと思います

The environment a knife is used in is, in truth, an extremely harsh one for metal.

That is the honest Japanese framing. Rust is not a moral failure and not a badge. It is the expected behaviour of iron in a wet, salty, acidic place, and the job is to keep taking it off.

The one thing Japanese shops tell you to leave alone

Being fair means reporting the exception, and there is exactly one. Jikko, describing how to scour a blade with cleanser, adds this:

擦っていくと薄いネズミ色の点が残る場合がありますが、これは取る必要はございません

As you scrub, faint mouse-grey spots may remain. There is no need to remove these.

That is the closest thing in Japanese shop writing to the English idea of a patina. Notice how narrow it is. It is not a recommendation to cultivate anything. It is permission to stop scrubbing when what is left is grey rather than orange.

So the workable rule, assembled from Japanese sources rather than from either extreme, is this. Orange comes off, today. Grey you may leave. Nobody in Japan is telling you to manufacture the grey with vegetables.

The mistake that matters most: never scrub the edge

This is the part I would keep if you forget everything else, and it is the one place where the English rust-eraser advice actively points you at the wrong spot.

Tojiro explains the structure first, and it lands exactly on the construction I wrote about in the piece on how these knives are actually made:

芯材にハガネ系材料、側材にステンレス系材料を使った層構造になっています。このような複合材では、刃先に出てくるのはハガネ系材料であり、側面よりも刃先にサビが発生する可能性が高くなる

It has a layered construction with carbon-type steel as the core and stainless-type material as the cladding. In such a composite material, what emerges at the cutting edge is the carbon-type material, so rust is more likely to occur at the edge than on the faces.

Think about what that means for a clad knife, which is most of what you can buy. The stainless outside is the part you can see and polish. The carbon core is exposed in one narrow strip: the cutting edge. That strip is the most rust-prone part of the knife and also the part you must never rub.

Tojiro says why, and then says what to do instead:

刃先を強い力で擦る、磨くなどすると、手を切ってしまう危険があります。砥石にのせて刃先を研ぎ、サビを落とすようにしましょう

Scrubbing or polishing the edge with force risks cutting your hand. Put it on a whetstone, sharpen the edge, and take the rust off that way.

Jikko, independently, gives the same instruction with a different reason:

刃先の部分をスポンジタワシでこすると切れ味が落ちるため、必ず砥石で研いでサビを落として下さい

Scrubbing the edge area with a scouring sponge reduces sharpness, so always remove rust there by sharpening on a stone.

Two separate houses, in different cities, agree: faces get scoured, the edge gets sharpened. One warns you about your hand, the other about the edge. Both are right.

So when a guide tells you to run a rust eraser over the blade, it is describing the correct treatment for the face and the wrong treatment for the only part that was going to rust first.

The routine, from someone who sharpens for a living

Jikko publishes a rust-prevention procedure written by its sharpener, who previously cooked at a well-known ryokan. It is four steps and the shop is explicit that no special equipment is needed. A dry towel, tissue, blade oil or salad oil, and hot water.

  1. Wash the knife after use.
  2. Pour boiling water over it to dry the surface, then wipe with tissue.
  3. Apply blade oil, or salad oil, and wipe off what remains on the surface.
  4. Put it away.

With three notes attached, and the notes are the valuable part:

  • 包丁は乾燥室には入れないでください — do not put the knife in the drying cabinet. Many Japanese kitchens have one. It is for dishes.
  • 毎日使うようであればサラダ油は無くても大丈夫です — if you use it every day, you can skip the oil.
  • And the caveat almost nobody states in English: if a knife will sit unused for months, 油が水分の代わりになり錆びる場合もある, the oil itself can end up holding moisture and causing rust, so it still needs checking periodically.

The stated key is 水気をしっかりと拭き取り、熱湯をかける — wipe the water off properly and pour hot water over it.

Boiling water yes, flame no, and the reason is a number

Here two Japanese sources look like they contradict each other, and resolving it is genuinely useful.

Jikko says pour boiling water on the blade to dry it. Tojiro says:

水分を早く乾燥させるために、火であぶることは厳禁です。火であぶると包丁の焼きが戻ってしまい、切れ味に致命的な打撃を与えることになります

Holding it over a flame to dry the moisture faster is strictly forbidden. Doing so will temper the steel back and deal a fatal blow to the cutting performance.

These agree, and the reason is a temperature. In the previous piece I quoted Tojiro published tempering specification: after hardening, the steel is reheated to 180 to 200 degrees Celsius to give it toughness. That reheating is what sets the final hardness. Boiling water tops out at 100 degrees and cannot reach into that range. A gas flame passes through it instantly.

Hot water dries the blade using heat the steel does not care about. A flame re-runs the last step of the heat treatment, badly. Same goal, two sides of a threshold that has a published number.

Rust removal, and the detail English guides miss

Sakai Ichimonji lists three methods, in the order it actually uses them:

  1. A rust eraser. The company names the one it uses in the shop, an abrasive block sold for knives.
  2. Wet-and-dry abrasive paper. Coarse for large rust, fine for small. It specifies wet-and-dry rather than ordinary sandpaper, because a knife should be worked wet.
  3. Cleanser. Poured on the blade and worked with the rough side of a sponge, or with a metal scourer if the rust is bad.

Then the technique note, which I have not seen in any English guide:

包丁には必ず研磨した目、筋があります。その研磨の目に沿ってミラクルクリーンで磨いていけば綺麗に取れます

A knife always has a grinding grain, a set of lines. If you polish along that grain, the rust comes off cleanly.

Every Japanese blade carries directional marks from the grinding stages I listed in the previous article. Work along them and the surface stays even. Work across them and you leave a patch that reads as damage on a blade whose whole surface is a finish.

Tojiro adds a household method that costs nothing: rub the surface with a cork or an offcut of daikon, which it says removes rust, leaves the surface smooth and improves the cutting feel.

Two more things Japanese makers say and Western buyers do not hear

Stainless rusts. Jikko is direct about it: stainless carries an invisible film, and if you neglect it, red rust starts from there. Tojiro warns that even a stainless blade left wet can end up with holes in the body of the blade. Buying stainless buys you margin for error, not immunity.

The dishwasher is refused for two named reasons, not out of tradition. Tojiro says the detergent chemistry makes rust more likely than normal, and the water flow knocks the edge against other dishes and the basket, which chips it. Those are testable claims rather than folklore, and the second one applies to stainless knives just as much.

And one habit, from Jikko, that is the whole article in a sentence:

お寿司屋さんをイメージして頂ければ解りやすいと思いますが、食材を切るたびに包丁を洗ったりタオルで拭いていますよね

Picture a sushi restaurant. They wash the knife or wipe it with a towel every time they cut an ingredient.

That is not ceremony. It is the reason those knives survive decades of use in the wettest job in the kitchen.

Should you buy carbon steel at all

Here is where I have to revisit something I wrote.

In the first piece in this series I made white steel number 2 the default recommendation, on the grounds that the grade ladder above it is largely a shop pricing structure. I stand by the steel argument. I did not, at the time, price in the maintenance. Now that I have read what Japanese shops actually tell their own customers, I want to add a condition rather than leave that recommendation bare.

The variable that decides it is not skill. It is frequency.

Jikko makes this point almost in passing and it is the most useful line in any of these sources. A santoku used every day rarely rusts, because it is being washed and wiped constantly. Deba and sashimi knives, it says, are the ones you clean carefully, put away, and find rusted next time, because they sit unused and humidity is enough. The knives most likely to rust are the ones you use least.

So:

  • If you cook most days and the knife will be in your hand and under the tap constantly, carbon steel is a reasonable default and the routine above is about thirty seconds per session. White number 2 stays my recommendation for that person.
  • If you cook a few times a week, or the knife is for a specific job you do occasionally, buy a clad blade with a stainless jacket, or stainless throughout. Not because carbon is difficult, but because the failure mode is storage, and storage is exactly what an occasional knife does most of.
  • If it is a gift for someone whose habits you cannot see, stainless clad. A rusted first Japanese knife is how people conclude the whole category is precious and stop using it.

What I would buy

Top pick: nothing. The entire maintenance kit is things you already own or can buy for pocket money, and I earn nothing from any of it. Abrasive cleanser. A dry towel. Tissue. Salad oil. A cork. An offcut of daikon. Wet-and-dry paper from a hardware shop. A rust eraser is the only purpose-made item and it costs a few dollars. This is the least commercial article in the series and it is probably the one that will save readers the most money, because the thing it prevents is a ruined blade.

The one purchase worth making: a whetstone, if you do not have one. Every Japanese source here routes edge rust to the stone rather than to a scourer, which means without a stone you have no correct way to treat the part of the knife that rusts first. That is a stronger argument for owning a stone than sharpness is.

If you are choosing a knife right now and you cook occasionally: a stainless-clad blade. On the shelf I have a partnership with, that is the same Sakai Takayuki INOX PRO santoku 180mm at $108.99 I recommended last time, for a reason that has nothing to do with commission: its whole construction exists to put stainless on the outside. Be aware, from Tojiro description above, that the edge on any clad blade is still carbon core and can still rust. Stainless cladding protects the faces, which is where you look, not the edge, which is where it starts.

Marked down: any advice that tells you to force a patina with an onion, a potato, mustard or vinegar and then leave it. Japanese makers ask for the same protective film and produce it by cleaning the blade, not by staining it. If a shop in Sakai wanted you to grow a food patina, it would be the cheapest possible thing for them to recommend, and none of the four I read here does.

Avoid: drying a knife over a flame, the dishwasher, and the drying cabinet. Each of those is refused by a Japanese maker for a stated, physical reason, and the first one is irreversible.
